How to Cook with Saccharin: Elevate Your Dishes with a Touch of Sweetness

Saccharin, a versatile and powerful artificial sweetener, has been a staple in the food industry for decades. Whether you’re looking to reduce sugar intake or experiment with new flavors, saccharin offers a unique way to enhance your dishes. At JMC, we pride ourselves on manufacturing the world’s highest quality saccharin, ensuring that every sprinkle you use is both safe and effective. Let’s explore how you can incorporate saccharin into a variety of delicious recipes.

1. Kimchi

Kimchi, Korea’s iconic fermented dish, is known for its spicy, tangy and slightly sweet flavor profile. By adding a small amount of saccharin during the fermentation process, you can achieve that perfect balance of sweetness without the need for sugar. Saccharin helps to speed up fermentation and gives kimchi a consistent flavor that will delight your taste buds.

2. Tteokbokki

Tteokbokki, the popular Korean street food made with chewy rice cakes, is traditionally coated in a spicy, sweet and savory sauce. Saccharin can replace sugar in the sauce, providing the same level of sweetness with fewer calories. This makes the dish a little lighter while maintaining its signature flavor.

3. Sweet Potato Latte

Sweet potato lattes are a comforting and creamy beverage, perfect for chilly days. Adding saccharin instead of sugar allows the natural sweetness of the sweet potato to shine through while keeping the drink low in calories. Electrolysis cells are used to facilitate electrochemical reactions such as the refining of salts or splitting water into hydrogen and oxygen. REDOX Flow batteries use liquid electrolytes to store energy. All of these devices rely on a polymer membrane that selectively transports charge while acting as a barrier to ion transport. One of the most commonly used polymers in these applications is the fluoro-copolymer,Nafion®. The global Nafion® market was valued at USD 787.85 million in 2022 and the growth in the use of clean energy technologies is expected to increase demand for Nafion® at a CAGR of 4.8% during the the next 10 years.¹

As the market for these clean technologies grow, opportunities are arising for alternative polymer membranes. Some of the challenges that may hamper the market growth are the high cost of Nafion® and the environmental concerns regarding fluoridated polymers that are increasingly being regarded as “forever chemicals”. Therefore, it is important  to focus on developing cost-effective and eco-friendly alternatives to Nafion® that can meet the diverse needs of different applications.

Two important types of polymers for these membrane applications are sulfonated hydrocarbon-based ionomers and sulfonated polysulfones. Both of these polymers are made using processes that are core capabilities of JMC. Sulfonating polymers generally requires the use of concentrated acids and the generation of large amounts of waste that must be neutralized. In manufacturing the world’s highest quality saccharin for over 70 years, JMC has developed the capability to do sulfonation reactions on a large scale, reliably and sustainably.

JMC is now poised to respond to growing market demand for these membrane polymers. Expanding the use of our sulfonation capabilities will enable us to provide these new, Powerful Polymers, to technology manufacturers across the entire clean energy industry. Sweeteners, what’s the difference?

In today’s world, where health consciousness and dietary choices take center stage, the quest for the perfect sweetener has become more relevant than ever. Sweeteners, especially artificial ones, are integral to countless diets and food products, offering sweetness without the added calories of sugar. But what truly sets them apart? And why might saccharin stand out among the rest?

Aspartame
Aspartame is a low-calorie artificial sweetener, about 200 times sweeter than sucrose (table sugar). It’s widely used in soft drinks and other low-calorie products. However, aspartame loses its sweetness when heated, making it less versatile for cooking or baking applications. Some people are also sensitive to aspartame, reporting headaches or allergic reactions.

Sucralose
Sucralose, another popular sweetener, is approximately 600 times sweeter than sugar. It’s unique because it doesn’t have a bitter aftertaste and can withstand high temperatures, making it suitable for cooking and baking. However, concerns have been raised about its stability over time and its impact on gut health.

Stevia
Derived from the leaves of the Stevia rebaudiana plant, stevia is a natural sweetener that’s gaining popularity. It’s up to 300 times sweeter than sugar but has a distinctive aftertaste that some consumers find off-putting. While it’s marketed as a natural option, not all stevia products are created equal, with some processing methods raising questions about whether they are environmentally friendly as well as questions about purity and taste.

Saccharin
Enter saccharin, the world’s highest purity sweetener, revered not only for its unmatched sweetness—over 300 times sweeter than sugar—but also for its remarkable stability under heat. This makes saccharin an ideal choice for both cold beverages and high-temperature culinary applications. Unlike many other sweeteners, saccharin doesn’t break down or lose potency over time, ensuring consistent sweetness. Furthermore, extensive research over the years has proven saccharin’s safety, dispelling any health concerns and reaffirming its status as a safe choice for consumers worldwide. Its ability to maintain stability, combined with a clean taste profile, positions saccharin at the pinnacle of sweetener choices.

The Sweet Conclusion
When it comes to choosing a sweetener, it’s not just about the sweetness. Factors like heat stability, safety, taste, and health impacts play critical roles. Saccharin shines through as the superior choice, offering unparalleled sweetness, versatility in cooking and baking, and a proven safety record. In a world brimming with options, saccharin stands out as not just a sweetener but the sweetener, a testament to our commitment to excellence and health. Whether you’re formulating new products or simply sweetening your morning coffee, saccharin offers a blend of benefits unmatched by its counterparts, reaffirming its place as the sweetest choice in a crowded market.
